Ingredients for 4 tartares:
320gr/12 once of sea-bass
The juice of half lemon
1 ripe avocado
Salt and black pepper to taste
Extra-virgin olive oil to taste
Cut to dices the sea-bass fillet.
Add salt, black pepper, the lemon juice and olive oil.
Mix it and let it marinate for 5 minutes.
Peel the orange and segment it.
Peel and cut to dices the avocado.
To make up the tartare use a ring mould. Lay the avocado dices, the orange segments and lastly top with the marinated sea-bass.
Decorate the tartare as you wish or as per Rino’s demonstration.
